What is your favorite salad?

So, I am usually good at being creative, but I am at a loss and curious, what is your fave salad?

I am going to a BBQ and need to take a salad.  Just would like some ideas.  If you could help by sharing, that would be great and thanks in advance. ;)

Have a wonderful weekend!

    I love Broccoli Slaw, using the bagged shredded broccoli stems and carrots. I add whatever ff dressing I’m in the mood for, just to get it moist, not drowing in it ;) then sometimes I add some chopped toasted walnuts and cherry tomatoes. Enjoy your bbq!!

    Lately, this one with orange-oregano vinagrette: http://www.eatingwell.com/recipes/rainbow_chopped_salad.html?utm_source=EWTWNL

    I also love the spinach, red onions, cucumbers and oranges salad with rasperry vinagrette and some toasted cashews/walnuts.

    I also like a lightened version of Waldrof salad as a fruit salad (or any mixed fruit salad with lemn yogurt-poppy seed dressing and a bit of wallnuts, really.

    Beans, broccoli, tomatoes and redonions always goes well in my house as well.

    Boiled beet (grated) with garlic, wallnut and a bit of mayo.

    Shredded daikiri, carrots, granny smith apple, minced celery and red onion with a bit of oil dressing.

    Crab meat, rice, celery, bell peppers, red onions.

    Chicken, tarragon, grapes….

    Uhm, I can go on like that, but what kind of a salad are you looking for? Cold, warm, potatoe-based, with rice, with pasta? You can also check the EatingWell site for ideas, they had a great line-up of spring salads.

    I AM trying the beet salad… it sounds so wonderful.

    Right now my absolute favorite is a simple greek salad (cucumber, tomato, red onion, feta cheese, black olives and balsamic vinegar) super easy to make, low in calories (with the right feta and olives) and delishious.

    If you want to make a ‘fancier’ greek salad, here’s a recipe that is fab too, wait with the dressing untill you are ready to eat it though:

    for dressing:
    3/4 olive oil
    1/2 cup red wine vinegar
    1/2 cup lemon juice
    1 tsp crushed dried mint
    1/2 tsp salt
    1/4 tsp cracked black pepper
    Put these ingr. in a jar w/ lid, shake well and let sit for a while.

    Salad:
    3 cups torn romaine lettuce
    2 cups mixed torn lettuce
    1 cup shredded cabbage
    1,5 cups sliced cucumbers (1 medium)
    2 medium tomatoes, cut into thin wedges
    1 cup sliced red onions
    1 cup trimmed and sliced white mushrooms
    1 red bell pepper, julienned
    1 cup crumbled feta cheese (4 ounces)
    1/2 cup pitted and sliced calamata olives

    First toss the salads and cabbage together, then add the other ingr. and toss gently.
    Add dressing and serve immediately

    This one takes a little more time to prepare but it tastes soo good and it looks really good with all the different colors.

    Have a great weekend and a wonderful bbq Jennifer!

    Taco Salad is my Fav!!! You can make it by mixing like kidney beans, salad mix, cilantro, salsa, tortilla chips, shredded cheese, I add avocado and sour cream on top, oh so yummy!!!

    For a different type of salad, take fat-free cottage cheese, fat free coolwhip, sugar free jello (flavor to match which fruit you pick), and some kind of canned fruit like pinneapple, madarin oranges, peaches, fruit cocktail or all of the above… just mix it all in a bowl together!!! YUMMY!!!

    Ok, I recieved a recipe from a dear buddy, and was reminded how I too love this one, so I will share. I am doing a little tweaking though. The no white sugar thing will continue on as much as I can, but when I make things I do use a few substitutions.

    * 1 t. of butter + 2 t. of cold pressed olive oil
    * 3/4 cup almonds or pecans (soaked)
    * 1 pound spinach, rinsed and torn into bite-size pieces
    * 1/2-1 cup dried cranberries
    * 2 tablespoons lightly toasted sesame seeds
    * 1 tablespoon poppy seeds
    * 1/4 c. raw honey
    * 2 teaspoons minced onion
    * 1/4 teaspoon paprika
    * juice of one lemon
    * 1 T. apple cider vinegar
    * 1/3/-1/2 c. cold pressed extra virgin olive oil or any lighter tasting oil.

    DIRECTIONS

    1. In a pan, melt butter and oil over medium heat. Place nutss in pan until lightly toasted. Remove and set aside.
    2. In a large bowl, place spinach with the cooled nuts and cranberries.
    3. In a medium bowl, whisk together the sesame seeds, poppy seeds, honey, onion, paprika, lemon juice, cider vinegar, and oil. Toss with spinach just before serving and ENJOY.

    *Note I made changes to this with out trying. I am not having sweeteners at this time so I will enjoy this later. But I love this recipe. I have had something similar in a restaurant with strawberries instead of cranberries. YUM! This will be great. I think next week I am going to do some tweaking and make this, but I will use a fruit puree (pineapple or a few dates instead of sugar??? not sure). I can not wait! :)

    My fave salad is the asian grilled chicken one from Mcd’s. Alot of them don’t carry it anymore, and I loved it.
